This chicken and apple salad can be used atop a bed of lettuce and crunchy salad vegetables, or stuffed into a pita pocket for a sandwich.
Cook Time: 15 minutes
Ingredients:
* 2 cups cooked skinless chicken breast, cubed(cooked on the forman grill)
* 1 stalk of celery, sliced ( yuckk0) no celery for me!
* 1 medium unpeeled apple, diced (fugi for me)
* 1/4 cup raisins(i'm using craisins, a nice change)
* 1 tbsp lemon juice(nothing but fresh squeezed lemon juice)
* 1/4 cup low fat yogurt
* 1/4 cup fat-free mayonnaise
* 1 tsp curry powder
Preparation:
Place chicken cubes in a medium bowl along with sliced celery, diced apple and raisins. In a small bowl, whisk lemon juice, yogurt, mayonnaise and curry powder. Pour over chicken and toss to coat.

Hubby and I are now working out at the gym in the mornings. I have water aerobics on Monday and Wednesday at 11:30 and we take walks in the evenings when he gets home. The Pickering home is going to be a much healthier place:)
I've had hip and back pain for the last 4 years and I know in my heart that no pills are going to fix it. It may help it for a while but losing weight will make it a much better situation:) I want to feel better on the inside and out and this has made me feel better already:)
I will post Lunch meals and dinner meals if they are different than lunch meals:) Breakfast will almost always be 2 eggs with an apple or orange and a cup of coffee:)
